Wine of the Week – Txakoli and a final fling of summer

I have just returned from a wonderful trip to Australia and New Zealand and will be telling you about some of my experiences over there in the future.

In the meantime, I have returned to some very warm weather and so sought out some lovely fresh white wine to enjoy with some seafood so that I could properly celebrate this last fling of summer.

The wine I found was a Txakoli – Chacolí in Castilian Spanish – which comes from the País Vasco, Spain’s Autonomous Basque Region. Txakoli is a wine style that I love and have written about before, but until recently it has been considered somewhat obscure. Well now it is becoming much better known and easier to find and I discovered that Marks & Spencer carry a rather a good one. In fact I liked it so much that I made it my Wine of the Week.

There are three Txakoli DOs, but, much as I like some other Txakoli wines – especially the great Itasas Mendi 7 from DO Bizkaiko Txakolina near Bilbao, try it if you can – UK stockists are here, US stockists here – I am especially drawn to the Getariako Txakolina that is grown on the wild coastline around the beautiful fishing village of Getaria 30km west of San Sebastian. Getaria is a wonderful place almost totally dedicated to hedonism, bars and restaurants line the streets. Much of the cooking is done outside, so the smell of grilling fish is a constant and guaranteed to make you hungry. In many ways it works to go there on your way to San Sebastian as it prepares you for the delights to come.

If you are a hedonist and like food and wine, then San Sebastian – Donostia in Basque – is a place you must visit. It is teeming with bars and life, the best tapas in Spain – they call them pintxos – and loads of Michelin star restaurants too, if that is your thing.

Txakoli should really be poured from a great hight into a tumbler – get a Txakoli pourer if you can.

This particular wine is very clever sourcing by M&S, because the producer, Amesguren, are actually the people who make Ameztoi, which along with Txakolin Gorria, is considered the best producer of Getariako Txakolina. So we know the provenance of this wine is good and this wine has a better label than Ameztoi!

This wine is made from the local Hondarrabi Zuri – I wonder why nobody grows that anywhere else? – and has a light natural fizz from the fermentation, which makes it taste really fresh.

And that is the secret with this stuff, keeping it fresh, light and zesty. The nose is floral and citric and has a touch of the seashore and something saline about it. Then it just dances across your palate, light, fresh, zingy, spritz and yet with waves of flavour, lots of light flavour. Green apples, grapefruit, nettles, lime, blackcurrant leaf are all there, but in a sort of sketched in way, rather than in a fully formed picture. Instead this wine wins with a thrilling mineral and crisp acid finish that just whets your appetite for more – more of this, some seafood and anything else. What’s more it only has 10.5% alcohol, so won’t addle too many brain cells either.

Try it with grilled prawns, scallops, oysters, sea bream, sea bass, sushi, a Chinese takeaway or on its own, anyway you have it, it’s a lovely wine – 89/100 points.

Serious Rosé can still be fun

I enjoy drinking a good rosé and enjoy its versatility – a nice rosé is fun on its own and can often be an inspired choice with food, especially the sort of things that I eat in the Summer.

What’s more I get a little tired of people claiming not to like rosé – what’s not to like exactly? I also find it a trifle annoying that quite a few people are somewhat disparaging about rosés, ‘they’re neither one thing, or the other’ is a refrain that I often hear. That is right, they are not white wines, they are not red wines, but something different – that is the point!

However, much as I enjoy them, I hardly ever think of them as being complex or great wines. Every month in London I present tastings to a group of tasters who are really interested in wines and I love showing them different things that I find on my travels. Well recently, just to see what people thought, I put on a tasting of rosés that were a bit more serious, and potentially more complex than the normal examples that people buy.

I had put the tasting together over several months, based on wines that I found in all sorts of different places. They were all made using the skin contact method – meaning the colour comes from the skins of black grapes as with a red wine. I wondered about putting in something like a Sauvignon Blanc Rosé from South Africa or New Zealand as those are made from blending a little red wine into white to give the colour, but I couldn’t show everything.

The tasting went well and surprised a lot of the tasters, so I decided to share the best wines with you.

Oh I do like Txakoli (or Txakolin they are not consistent with the naming). It is pronounced Chakoli and hails from the far north of Spain – you can read all about it in an article I wrote for Catavino. There are actually three Txakoli DOs and this wine comes from DO Getariako Txakolina, which is around the lovely fishing village of Getaria just 30km west of San Sebastian – which currently is my favourite place on earth! Txomín Etxaníz is widely considered to be the best producer of this beguiling wine. Formally established as a company in 1930, the family have been farming these hillsides and making wine since at least 1649.

The beautiful bustling fishing village of Getaria, Txomín a just a couple of kilometres away on a hillside overlooking the village.

This rosé – the Gorria on the label strangely means red in Basque – is a blend of the two most important grapes, 60% Hondarrabi Beltza – a black grape – and 40% Hondarrabi Zuri – a white grape.

This was the lightest of the rosés, but a firm favourite with some tasters. The colour was pale, with a light cherry, strawberry, rose petal hue. The nose was delicate and restrained with that pure, seashore, salty and mineral Txakoli thing. It is bright, fresh and thrilling with lots of ripe cherry acidity, the merest sprinkle of pepper and some softer riper strawberry fruit too. It is light as sea air, but the flavour is deep and wonderful, so the wine feels elegant and satisfying. Perfect sun drenched terrace drinking, with the merest hint of something not quite bone dry – 91/100 points.

Also remember the Txomín white Txakoli is just about the best example of the type that you can try, it is available from The Oxford Wine Company for £15 a bottle.

Bastardo is a little used and somewhat unloved grape variety from Portugal, but David Mazza has found a way to make a lovely wine from it, by making a rosé. David is one of my most exciting discoveries of the last year or so. He is a lovely guy who farms a tiny estate in Western Australia, only grows Iberian grape varieties and makes superb wines – you can read more about him here.

The nose offers rose petal aromas, some strawberries and cream notes, mineral earthy notes, some herbs and some pomegranate too.

The palate has lovely weight and a creamily ripe texture that caresses the palate with soft red fruit with an underlying orange acidity with red fruit highlights. There are some light spices and Mediterranean herbs too. The acidity is perfectly judged, making the wine fresh, lively and clean without being in the least bit tart.

There is a fair bite of tannin for a rosé, just enough to give some elegance and structure, and a long finish that delights with redcurrant and cranberry fruit. This is a really satisfying and fine rosé of exceptional quality, it is not exactly light weight, but neither it is it heavy, but it is refreshing and lively. A fine and complex rosé – 92/100.

Tenute Sella from northern Piemonte – Alpine Piemonte if you will – is still run by the family who founded it in 1671. They farm in the DOCs of Lessona, Bramaterra and Coste della Sesia and their buildings, cellars and vineyards are spectacular as you might imagine. They have a beautiful palazzo style building, while the Alps provide a stunning backdrop to the vines. Their main grape is Nebbiolo, but they have Vespolina, Croatina and Erbaluce too and make brilliant wines, including the best Nebbiolo rosé I have ever tried, so I put it in the tasting.

Tenute Sella.

This rosé is pure Nebbiolo and from 45 year old vines, old vines helps give depth and concentration to the wine. The vineyards are in the two ‘Cru’ appellations, Lessona (95%) and Bramaterra (5%), which is why the wine is labelled Coste della Sesia, as that is the wider area. The Bramaterra component is made by bleeding some juice off their red wine while it is fermenting. The Lessona component gets 36 hours cold soak pre fermentation to help extract flavours and complexity. The wine has malolactic fermentation and has a 6 month ageing on the lees in tank.

This has real Nebbiolo character on the nose, with earthy and rose petal notes, blood orange, cranberry and spice too. The palate is quite full, with some weight and intensity and texture – those lees? It is also very tasty with lots of rich red fruit, that twist of bitter orange, some spice and a good fresh acidity and minerality making it lively. This is a fine rosé – possibly my favourite on the night – and it would go with all manner of dishes from salads and fish to veal and pasta dishes – 92/100 points.

I would also point out that everything I have tasted from Tenute Sella is of very high quality.

I love showing wines from Chêne Bleu, because they are always so very good. It’s a beautiful estate in the rugged and isolated Mont Ventoux area just a few kilometres north of Gigondas and east of Séguret on the borders between the Côtes du Rhône and Ventoux. The whole project has been a labour of love for the owners Nicole and Xavier Rolet and I would recommend that you read the story in my post here. The estate is farmed organically and in conversion to biodynamic. The secret is the height, the vineyards – there are only 30 hectares of them, sit at between 550 and 630 metres above seal level – very high for Europe – where the hot Mediterranean air is cooler and the nights are distinctly cool, which makes the wines fresher than you would expect – so finer. On top of all that they hand harvest and sort the grapes meticulously – their attention to detail shows.

Nicole Rolet.

Their rosé is a classic southern Rhône blend of 65% Grenache, 30% Syrah and 5% Cinsault and it spent a very short time in oak barrels to add complexity.

The colour is lovely, not deep, not place, but bright and appealing. The nose offers some delicate spice, rich citrus and pungent red fruit, while the palate is pretty full, with rich soft red fruit, refreshing acidity, concentrated fruit, a light spicy oak character and a silky, textured mouthfeel. Again perfect as n aperitif or with any Mediterranean style meal – 92/100 points.

I visited Château Brown once, it is a star estate in the Graves region and always delivers great wines and value for money. It has a checkered history though and was going through a bad patch in the 1950s – in fact there were no vines then – which is why it is not a Grand Cru Classé de Graves. Since 2004 the estate has been run by Jean-Christophe Mau and the quality of the wines has improved dramatically. There are 29 hectares of vines on the famous gravel – Graves – soils and nowadays they use sustainable viticulture to ensure balance and biodiversity in the vineyard – so much so they even keep a colony of bees.

They make lovely reds and a lot of their reputation has been built on their fine, rich, barrel aged white wines – both of these are AOC Pessac-Léognan. The rules of the appellation do not allow for rosés though, so this has to be labelled simply as AOC Bordeaux, but the quality is far higher than this relatively humble provenance would lead you to expect.

This rosé is a 50/50 Cabernet Sauvignon and Merlot blend, hand harvested, de-stemmed and macerated on the skins for 4 hours, which gives the subtle and pale colour. After a cold fermentation the wine was aged for 4 months in second use oak barrels with some lees stirring for extra texture and complexity.

The colour is more peach than pink with redcurrant fruit notes and something nutty and mineral too. The palate is seductively textured and promises a great deal, but the wine has to be treated more seriously than rosé normal are, serve it lightly chilled rather than cold and open it in advance – perhaps even decant it, all things I found out by mistake as the wine really only started to show its form after everyone had gone home!

All  my working life I have been fond of the wines of Navarra, there is great quality there and great value too. I never really understand why they are not more widely available in the UK. It is a beautiful place, full of passionate wine producers. Production is nothing like the scale of neighbouring Rioja, so it remains attractively rural and the producers are essentially farmers – read my piece here for an overview and here, here, here, here and here about specific producers.

The Chivite family have been growing grapes and producing wine in Navarra since 1647 – which as I often joke to my students, is just before lunch in Spain! They are without doubt the most famous and leading estate in the region and are still owned by the founding family – indeed the current Julian Chivite is the 11th generation of the family to run it. They produce several ranges of wines, all good, even their more entry level Gran Fuedo wines from the warm deep south of Navarra. In recent years though they moved production of their top wines to their Finca Granja de Legardeta in the cooler Navarra Tierra Estella sub-zone – just a little bit south of Estella on the map. This area is influenced by the Atlantic and is pretty high too, so is cooler than further south, which gives a nice long ripening season to allow the grapes to develop complexity, while maintaining freshness.

The Coleccion 125 range – which are all superb – was originally created to celebrate the 125th anniversary of the original Chivite winery in Cintruénigo in the south of Navarra, but is now a separate range from their own family vineyards. This rosé is made from 100% Tempranillo grapes, aged for 12 months in French oak barrels with occasional lees stirring.

The colour is amazing, like wild salmon, while the nose is quite lifted with red fruit, smoke and spice. The palate is quite textured and rich with lots of ripe cherry, strawberry and spice and light tobacco, together with some rich orange character. The acidity keeps it all fresh and juicy, while there is a touch of tannin. A fine, rich, dry rosé that needs food – I would love to try it with suckling pig, but can assure you that it’s marvellous with paella – 92/100 points.

So you see, rosé wines can be fine, they can be complex and they can be serious and when they are they can be delightful and great fun to drink too. All of these were dry, although the Txakoli had a tiny touch of fruit sweetness which made it rather gorgeous actually, and on the whole would be better with food than without. The next time you cook Mediterranean style food, be it paella, tapas, meze, slow cooked lamb or some grilled fish – try one of these wines, or something similar, with it. I think you will enjoy the combination.

Wine of the Week 26 – a deliciously tangy white

My Wine of the Week is a wine that I have actually written about before, different vintages though, but I always enjoy it so much and it so interesting and refreshingly different that it’s always worth another mention.

Earlier in the week I was invited to a wonderful wine dinner hosted by Joanna Simon. The theme was wines and food of South West France – or le Sud-Ouest  and it was in the trendy Boundary Restaurant in Shoreditch. The restaurant has a wine club which runs these wine themed evenings and a good time seems to be had as the food is quite superb and the restaurant is quite a beautiful place to be. In fact The Boundary fills a whole building and includes a hotel, a shop, café, bakery, bars and other restaurants and as if all that isn’t enough, there is also a rooftop bar.

The evening was lovely with a delicious menu of rich, interesting French food including a main course of braised ox check, with smoked wild boar in stunningly rich sauce, and a blindingly good cheese board. The wines that partnered them were all from the delightfully disparate region that is South West France and they went very well indeed. My favourite though, or one of them anyway, was a tangy, zesty, aromatic and richly flavoursome dry white wine that was perfect with both the salad of Bayonne Ham with black truffle and the Ossau Iraty cheese.

Plaimont are a cooperative and the leading producer in Saint Mont. As such they make a huge array of wines from everyday wines to more ambitious cuvées and they are never worse than decent. This little gem is quite special though, made from the region’s traditional ‘rediscovered’ grapes that give the wine it’s name, it is an exciting blend of 70% Gros Manseng, 20 % Petit Courbu and 10% Arrufiac. Gascony was originally the northern part of the Kingdom of Navarre (Navarra) and some of these grapes are grown over the border in Spain’s País Vasco to make Chacolí / Txakoli. In ancient times the people of Navarra were the Vascones tribe who later evolved into both the Basques and the Gascons.

It’s dry, medium-bodied and unoaked with a richly tangy citrus acidity and a richer stone fruit and pithy grapefruit palate with some creamy and honeyed intensity and texture to the fruit. This texture dominates the finish and makes it feel really succulent – 89/100 points.

This is such a lovely white wine, so delicious and so interesting that it deserves a wider audience. It would be a great wine to keep on hand to serve guests throughout Christmas – unless they read this site they will never guess how inexpensive it is – and it will go perfectly with anything from a cheese straw to a full blown meal. What’s more it might open the delights of France’s South West up to you, it is a beautiful, varied and sadly underestimated wine region.

Rioja’s Heart of Oak

Rioja’s fame exceeds that of all of Spain’s other wine producing regions. Many wine drinkers, me included, love Rioja – especially the red wines, but how Rioja became the famous wine region it is and how the wines came to be made as they are is an interesting story.

Back before a handful of Bordeaux producers started carving out a new market for fine wine in the seventeenth century, most wine – including Bordeaux and Rioja – was pretty ordinary fare. Drunk mainly because it was safer than water, wine was just a part of everyday life in those parts of the world where grapes grew.

Then as now Spain was covered in vines and awash with wine. Technology and understanding had not yet touched wine, so by and large the people who tended the grapes and made the wine merely watched the process take place. Nowadays winemakers control what happens in the vineyard and winery to achieve fully ripe grapes and to make clean wines.

So, what put Rioja on the wine map? Why did the wine revolution happen so much earlier in Rioja than Spain’s other regions?

Geography

From a location point of view Rioja has much going for it. The Sierra de Cantabria shelters it from the worst of the Atlantic rain, wind and cold – which prevent most of the rest of the Pais Vasco – or Basque lands – producing good red wines. A small part of Rioja – Rioja Alavesa – is in the Pais Vasco and it seems that Basque merchants, whose lands hugged the cold and wet Bay of Biscay, noticed that this drier area just to the south could produce the richer, stronger wines their overseas markets demanded.

In the past the big problem of course was transport, rough roads and ox carts could only transport so much and it must have been hard going to get the wine out. In those days the Spanish kept their wine in hog skins and served it from them too, so we can only guess what the wine would have tasted like after a few months – very different from even a basic wine of today.

History & a glimpse of the Future

On the cusp of the 19th century, only Bordeaux specialised in making fine wines for the wealthy. Surely many Basques and Riojans must have travelled north to see what it was that Bordeaux winemakers did to their wines that created their high reputation. Manuel Quintano was a Basque from the wine town of Labastida in Rioja Alavesa where his family owned land and made wine, and he certainly went to Bordeaux. Quintano was trained for the priesthood in Bayonne and this might be where he first came into contact with good red Bordeaux wines and perhaps where he saw qualities in them that his own wines lacked? Although ordained he became more and more interested in wine and in 1785 he travelled to Bordeaux to study how wine was made there.

He noted every stage of production and the differences from how wine was made back home in Rioja. Amongst much else he found out about racking and clarification, but above all it is believed he became the first Riojan to notice the effect that ageing in oak barrels could have on a wine.

It was this use of barrels that was the the most important thing Quintano learned. The oak did many things that were beneficial to the wine and these would have been especially noticeable in the days before modern vineyard and winery practices made rich, clean wines. The wood has a porous structure that allows a slight evaporation, which concentrates wine and allows in a trickle of oxygen that softens the tannin. This helps develop a more silky texture and this difference in mouth-feel between thin everyday wines and finer wines would have been much more obvious in the past when alcohol levels struggled to get above 11%.

Of course the wood also effects the flavour of the wine, often giving vanilla, cedar, coffee, cocoa or caramel characters. All of this can often give an impression of sweetness and richness into the wine, which helps accentuate that sensation of concentration.

However the most important thing the oak did for the wine was to make it live longer. The wood contains a polyphenol – or type of tannin – called ellagitannins that helps to protect the wine from oxidation. To most wine makers in the eighteenth century, whose wines only lasted a few months and visibly deteriorated over that time, this would have seemed like finding the key to eternal life.

Quintano returned to Labastida in 1786 and set about applying what he had learned and  successfully produced wine using these techniques. In 1795 he even exported wine to Mexico and Cuba, the first barrel-aged wines to be exported from Spain and it seems they arrived in perfect condition. However, not everyone was happy with these expensive developments and complaints were made to the Council of Castile – the government – who upheld that all Rioja wine must be sold at the same price. This of course made the cost of barrels and cellar ageing prohibitive and Quintano’s experiments ground to a halt.

His achievements though were never entirely forgotten and today Quintano’s name is used for a range of wines produced by Bodegas y Viñedos Labastida. Also some of Quintano’s vineyards now form part of Bodegas Remelluri which is owned by the family of that modern revolutionary, Telmo Rodríguez.

Stagnation

So the production of everyday wines carried on interrupted from time to time by the devastating effects of The Peninsular War and the various Carlist or Civil Wars of the early nineteenth century. The local people – and pilgrims en route to Santiago – still slaked their thirst with wines stored in skins while little trickles were exported to Bordeaux and elsewhere. This trickle turned into a torrent from 1850 onwards when oidium devastated the vineyards of Bordeaux. For ease of export these wines destined for overseas were transported in barrels. The best wines would often be selected for export and so the idea of barrels being associated with quality wine became widespread in Spain.

Events then came together which ensured Rioja’s future as a fine wine region and this future was all about the use of oak. War played its part too, Luciano de Murrieta – later the Marqués de Murrieta – was on the losing Carlist side in the civil war of the 1840s and went into exile in London. It was here that he apparently came to admire the fine wines of Bordeaux. On his way back from exile in 1850 Luciano spent time in Bordeaux to study winemaking and brought the modern techniques he found to Rioja where the Duque de la Victoria, the former prime minister of Spain and his boss during the wars – owned vineyards.

He set about making the fermentations more efficient and hygienic and then went looking for barrels. These were in very short supply and usually the wrong size, but it seems that even using make do casks Luciano proved his point. The wines had an intensity and a fragrance the everyday wines lacked and most importantly could enjoy a long life. The experiment was a great success with exports soon going  to Cuba and Mexico. Luciano marketed his own brand from 1852 and moved to a new bodega at Ygay near Logroño in the late 1860s.

Perhaps if this revolution had been left just to Luciano de Murrieta it would have happened very slowly, but luckily at least one other pioneer had also seen the future.

The Marqués de Riscal had similarly fallen under the spell of Bordeaux wines and studied how they were made – also in 1850 as it happens – and he set out to build a state of the art winery, based on the most modern practices then used in Bordeaux. He planted Cabernet Sauvignon as well as Rioja’s own Tempranillo and even employed a winery manager from Bordeaux. It was a long project, the winery and first vintage were not complete until 1862, but the wine was an instant success and even won Gold Medals at expos in Bayonne in 1864 and Bordeaux itself in 1865.

Riscal’s wines were in great demand and were the first Riojas to be sold in bottle. To ensure that the wine in the bottle was what he had made – and that it had not been drunk and then refilled by an unscrupulous merchant – he sealed his bottles with a wire mesh. This quickly became iconic and like his techniques became imitated by other Rioja producers.

It helped that the railway arrived in Rioja in 1864 and linked it to Bilbao and Madrid as well as the French frontier and so Bordeaux. Finally Rioja could export its wines more easily and efficiently.

So, by the 1860s because of a series of disasters, accidents, wars and study by inquisitive people Rioja had ceased to be a backwater for wine. Instead it had become a region producing wines, made by the most modern techniques, that were worthy of mounting a challenge to Bordeaux itself.

So, Rioja was born and strangely enough oak, rather than grapes, was the dominating characteristic. What’s more French oak was expensive and rather bizarrely it seems that it was more normal even for the French to use Russian oak in the days before the Russian Revolution in 1917. So instead Riojans looked to the recently independent Spanish colonies in the Americas as their source of oak. These countries were their natural trading partners and a large market for their wines. The oak was plentiful, cheap and gave even more flavour than European wood – in fact it gave that rich sweet vanilla character, that has been the hallmark of Rioja ever since.

Evolution

Spanish drinkers as well as foreigners quickly came to love this rich and clear flavour that set Rioja wines apart from the other wines of Europe. Ageing in American oak had many benefits that made the wines very attractive to Spanish drinkers who had never before been able to enjoy high quality wines from their own country. The rich oaky vanilla flavour became a fundamental part of the wine style, as did the silky texture and smooth tannins. This came from the long oak ageing which also ensured, together with careful racking, that the wines had little or no sediment in the bottle, something the Spanish consumer favours to this day.

So popular did the style become with the Spanish – and even now Rioja is more widely available in Spain than wine from any other region – that for well over 100 years only about 20% or so of production was exported. Rioja was the quintessential Spanish wine and this resulted in other regions copying Rioja’s techniques, style, even labelling and wire bottle seals.

Growers and Bodegas

One unexpected result of Rioja’s oak ageing techniques was the virtual demise of estate wine. Historically growers had made their own wine, albeit in a rudimentary way, and sold that to their neighbours or merchants to blend with other wines. The new methods and the cost of the equipment put modern winemaking beyond their reach so most of these farmers focussed on growing grapes which they sold to the bodegas who could afford the oak barrels and the new equipment. Even now estate bottled Rioja is relatively unusual with bodegas traditionally buying much of their fruit from a spread of growers.

It seems to me that in those low tech times this separation of skills could actually have been beneficial to quality. Nowadays we assume that estate wines are better, almost by definition, but this separation allowed the farmers to concentrate on growing better fruit while the winemakers could put their energies into turning them into good wine. It wasn’t universal by any means, but separating growing and wine making certainly became the norm and Rioja’s fame and reputation as a quality wine region stems from this moment.

This also allowed for the creation of some really strong and long lasting wine brands which might not have happened if every grower had been marketing their own wines – after all France which had a more grower centric and fragmented wine industry has been hampered in its fight back against the new world by a real lack of strong wine brands.

Continued French Involvement

Rioja had certainly advanced by the late 1800s, but was not yet entirely sure of itself. True the wines had a market in Spain and some quality Rioja was exported in bottle, but it is highly unlikely that Rioja would have developed as far and as fast as it did without further French influence.

Just as Rioja was getting started, Bordeaux was in deep trouble. Oidium and Phylloxera took a heavy toll on France’s vineyards from the 1850s to the the 1890s and so Bordeaux struggled to produce enough wine. Even when they had solved the Phylloxera problem by grafting their grapes onto American rootstocks there was a long, wine-less wait for the new vines to mature. Luckily Rioja had wine to spare, the quality was good, it had been made using modern French techniques and so perfectly suited the wine starved French market.

Indeed to a large degree the style of Rioja that we know today was a French invention. The long barrel ageing was a deliberate attempt to make the Rioja destined for the French market to taste more like Bordeaux did at the time. So successful was it that the techniques quickly became used for the entire production, not just the wines that were reservé for the French market.

Ageing

It is tempting to assume that Rioja as we know it emerged into the world fully formed in the mid 1860s. Certainly Riscal and Murrieta were quickly followed by a wave of other bodegas that are still with us today – these include López de Heredia, CVNE, Muga, Bilbaínas and many other famous names.

However, although the basics of the techniques – or recipe – had become established, the fine details took some decades to develop. The consumer was given wines that had already been aged and so were ready to drink and had little or no sediment. The vessel the wine was aged in gave a rich, sweet vanilla character that enhanced the wine’s natural fruitiness – this is an important consideration as in the days before modern technology and cold fermentation it was much more difficult to make fresh, fruity wine. So strange as it may seem, unoaked Rioja – now officially categorised as Joven – is an entirely modern development and has only been around for the last 40 years or so once winemaking made it possible. For nigh on 100 years, Rioja relied on oak to round out the wines and give them a richness they otherwise lacked.

The process of ageing the wines was called raising or criar – it is the same word for children and plants – and so the oak aged wines themselves came to be called Crianzas. As well as being the collective word for any oak aged Rioja, Crianza is also the official  classification term for those Riojas aged in wood for the shortest time.

Between the 1860s and 1960s all red Rioja was barrel aged and ageing was the most important consideration. So much so that until well into the 1960s many Riojas – and other Spanish wines – were labelled with no mention of vintage. Instead the vital piece of information on the label was how long it had been aged for and so they were labelled as 3er Año – meaning it was bottled in the third year after harvest. More expensive wines were labelled as 5˚ Año, meaning it was bottled in the fifth year after harvest. This tradition clung on into the 1980s for bottles in Spain anyway and I remember being very confused by it during my early days in wine.

The terms Reserva and Gran Reserva are so strongly associated with Rioja that it might surprise some to learn that they did not exist before the very late nineteenth century. Apparently the expression stems from French wine companies reserving certain barrels of Rioja that they would ship home to beef up their own wines. It was not until the 1920s that Reserva and Gran Reserva started appearing on labels.

Denomination de Origen & Classification 

Throughout history decrees had been issued regulating where Rioja wines could be made and as we saw during Manuel Quintano’s time, rulings had been made about how it could be made. It was not until the 1920s, with phylloxera beaten and a ready market for their quality wines, that serious attempts were made to legally define Rioja.

Rioja was created as Spain’s first Denomination de Origen in 1925, but no real control was  in evidence until 1953 when the Consejo Regulador drew up the regulations for Rioja wine. This controlled yields and permitted grape varieties, it banned chaptilisation and stipulated minimum alcohol levels, but above all it codified the ageing and oaking regime for Rioja wines – the current regulations are:

Crianza: Wines which are at least in their third year, having spent a minimum of one year in casks and a few months in the bottle. For white wines, the minimum cask ageing period is 6 months.

Reserva: Selected wines of the best vintages with an excellent potential that have been aged for a minimum of 3 years, with at least one year in casks. For white wines, the minimum ageing period is 2 years, with at least 6 months in casks.

Gran Reserva: Selected wines from exceptional vintages which have spent at least 2 years in oak casks and 3 years in the bottle. For white wines, the minimum ageing period is 4 years, with at least one year in casks.

Oak Types

As you can see the rules require aged Rioja wines to be aged in oak barrels, or casks  – chips and staves are not permitted – and these must be of the Bordeaux type that contain 225 litres. There are no restrictions as to the type of oak, but American oak has always been the most widely used.

Although we overwhelmingly associate Rioja with American oak, some producers champion French oak and its use is increasing. Some use just French, but I have noticed a trend for Riojas to be aged mainly in American oak with a small amount of French, typically 15% or 20%. Normally the wine would be aged and then blended, but to avoid this Bodegas Beronia for instance use barrels which have staves of both American and French oak.

French oak is split, not sawn and so the grain and pores never open as they do with sawn American oak. In addition the kiln drying of American oak concentrates their lactones, which accentuates those creamy vanilla notes. The result is that French oak gives a more restrained and subtle character of spice and cedar. Using a combination of the two can often make the wine seem tighter, firmer and, some might say, more elegant than using  American oak on its own.

Of course many bodegas are experimenting with other oaks and using them too. Hungarian, Slavonian and Russian oaks can all be found in Rioja today. Stylistically they lean in a similar direction to French oak but give less spice character.

The Present and the Future

In my view there can be no doubt that oak has been good for Rioja. Most Riojan winemakers seem to think that American oak has been good for Rioja too. It certainly seems to me that without the clear identity that American oak brings, the easily definable and tasty vanilla character, then Rioja would not have enjoyed the success that it has.

The use of oak, especially American oak, made the wines seem richer and more full-bodied than they actually were in the 19th and 20th centuries. People liked the aromas,  flavours and silky, smooth texture and found it easy to define what it was they liked in these wines. The style is approachable and so it is no accident that Rioja is often one of the first red wine styles that drinkers enjoy.

Vinos de Autor

Of course if oak can be seen as generally good for the region, it is also true that some producers feel a little constrained, albeit benignly, by the Reserva and Gran Reserva classification system. They want some of their wines to be an expression of the vineyard and the winemaking without reference to such a classification, one practical reason is that if a bodega produces a top wine as a Gran Reserva in one vintage and as a Reserva or even a Crianza the next, then some consumers might well imagine the wine to be inferior – which is not necessarily the case. The classification is about ageing and not quality. That is why increasingly many bodega’s top wines are now defined as Vino de Autor or signature wine and marketed without reference to the Reserva / Gran Reserva classification. CVNE’s Real de Asúa and Pagos de Viña Real are both examples of this, as are Roda’s Cirsion, Beronia’s III a.c, Contino’s Viña del Olivo and Muga’s Torre Muga amongst many others.

Progress

Nothing ever stands still and it is instructive that as grape growing and winemaking has become more technically advanced and accomplished then Rioja has branched out. As soon as cold fermentation made attractive, fruity and unoaked jovens possible, they made them. These can be enjoyable wines and offer great value for money, but they lack that classic oaky Rioja character and it is hard to envisage anyone ever producing a truly fine and complex unoaked Rioja.

All the producers I spoke too agreed that oak has helped to define their wines and to give Rioja a clear identity. Some saw the future as having increasing use of European oaks to produce more restrained wines, while most were of the opinion that American oak would continue to dominate Rioja – albeit with French and other oaks used as seasoning.

No one seemed in any doubt though that the future of fine Rioja wine will be glorious and is as closely linked to oak as its past.

Rioja Alavesa – a dramatic landscape

The dramatic landscape of this area provides an awe inspiring backdrop to any visits to the wineries of the area. It just cannot fail to impress, even if you are already familiar with it. What is more, it defines the place and explains the wines and their style.

The fact that Rioja Alavesa is a wine region that specializes in red wine at all is made possible by the mountains to the north, which protect the place from the extremes of the Basque weather. The whole area is a south facing apron clinging to the Cantabrian Mountains. This gives them excellent sun exposure – which can show up in pretty high alcohol levels, I tried one with 16.3%! The proximity of the mountains also ensures that they have lower rainfall than the other sub-regions of Rioja.

What is astonishing is quite how small this place is, half an hour will see you drive from one end of Rioja Alavesa to the other – provided that you don’t get lost on the windy roads, or stuck in the narrow streets of one of the pueblos.

The capital of Rioja Alavesa is Laguardia, but this town is only home to 2000 people and many of the other pueblos have populations measured in the low hundreds, apart from grape harvesting activity this is not a bustling place.

The two major towns are Laguardia and Labastida and their history is clear from their names. These are fortress towns built in the Middle Ages to protect the southern border of the Kingdom of Navarre from the Moors and Castille. Their history shows, they still look exactly like castles from a distance. All the pueblos have this fortified look to them and it is easy to imagine that time has stood still here.


The views looking south are really splendid and give a real feel of the landscape, the way the land falls away from the mountains to the Ebro river.


While the views to the north show the rugged inhospitable terrain that lies in wait for anyone going off to the rest of the Pais Vasco.

Home Thoughts from Abroad

The Basque Country is a beautiful place and very accessible from the UK. A quick flight to Bilbao is all you need to get to this slightly exotic and half familiar place.

Exotic, because this region is a part of Spain, the country of Picasso, Miro, Granada and Seville. However it is northern Spain, ‘green Spain’ and it is very different from most people’s view of the country which is clouded by direct, or indirect, experience of the costas. San Sebastian is quite grand and has more than a touch of the faded grandeur of Brighton, Eastbourne or Bournemouth. Perhaps, as it faces north and is foreign, Le Touquet or Deauville might be a better comparison?

The bars and coffee are much, much better though and as soon as you get into the narrow little streets of the old part, it is clear that you are in a Spanish city and that any comparison with anywhere else is superficial.

Waking up in San Sebastian was a delight and looking out across La Concha beach, which is right in the centre of the city, I was struck again by how varied Spain was. I know a lot of Spain, but this is very different.

My first winery visit was in Chacoli and again this was very unlike the Spain I know so well. The vineyards cover the most spectacular rolling hills and the scenery is very green and so unlike the countryside just an hour away to the south.

I will write it up properly another time, but here are some photographs of this extraordinary area. By the way, that path you see is the Pilgrim’s Way to Santiago.

I have long been fascinated by the Basque Country, how many other places can not only boast about using the oldest European language, but one that is related to no other? Basque is the last remaining pre-Indo-European language in Western Europe.

The Basque people have a vibrant history, a beautiful land, a prosperous present and a rich culture. It is widely considered to be the finest bit of Spain for gastronomy, both for swanky meals and tapas, called pintxos locally. It also produces some of the most thrilling wines in Spain today – which is really saying something as I consider Spain to be one of the most exciting wine producing countries in the world.
